Sourdough Dutch Baby

This recipe is a great way to used excess sourdough starter. You can use active or discard starter. Active will give you a fluffier result. A dutch baby is similar to pancakes but more dense. The best part is you can have breakfast ready in under 30 minutes!

Equipment

  • 12 inch cast iron skillet
  • mixing bowl
  • hand mixer

Ingredients
  

  • 2 cups sourdough starter (active or discard) 400g
  • 2 cups milk 480g
  • 8 eggs
  • 1/2 tsp salt
  • 2 tbs honey or maple syrup 42g
  • 6 tbs butter 85g
  • 1 tsp vanilla extract (optional)

Instructions
 

  • Add the butter to the cast iron skillet.
  • Place the skillet inside the oven and preheat to 450ºF
  • While the oven is preheating, mix together all of the remaining ingredients in a large mixing bowl. I like to use a hand crank egg beater.
  • Once the oven has reached 450ºF, remove the skillet from the oven and swirl the butter around to fully coat the skillet.
  • Add the mixture to the hot skillet and place back into the oven
  • Bake for 25-30 minutes. The middle should look fully set and the sides baking up higher than the center.
  • Allow it to cool off for about 5 minutes before serving.
