Sourdough Dutch Baby

This recipe is a great way to used excess sourdough starter. You can use active or discard starter. Active will give you a fluffier result. A dutch baby is similar to pancakes but more dense. The best part is you can have breakfast ready in under 30 minutes!

Ingredients
  

  • 2 cups sourdough starter (active or discard) 400g
  • 2 cups milk 480g
  • 8 eggs
  • 1/2 tsp salt
  • 2 tbs honey or maple syrup 42g
  • 6 tbs butter 85g
  • 1 tsp vanilla extract (optional)

Equipment

  • 12 inch cast iron skillet
  • mixing bowl
  • hand mixer

Method
 

  1. Add the butter to the cast iron skillet.
  2. Place the skillet inside the oven and preheat to 450ºF
  3. While the oven is preheating, mix together all of the remaining ingredients in a large mixing bowl. I like to use a hand crank egg beater.
  4. Once the oven has reached 450ºF, remove the skillet from the oven and swirl the butter around to fully coat the skillet.
  5. Add the mixture to the hot skillet and place back into the oven
  6. Bake for 25-30 minutes. The middle should look fully set and the sides baking up higher than the center.
  7. Allow it to cool off for about 5 minutes before serving.
