What is a Dutch Baby?
A Dutch Baby, also known as a German pancake, is a large, puffy pancake that is baked in the oven. It is typically made with a batter consisting of eggs, flour, milk, and a pinch of salt. The batter is poured into a hot skillet with melted butter and then baked until it becomes golden brown and beautifully puffed up. Dutch Babies are often served with toppings such as powdered sugar, fresh fruit, syrup, or even savory ingredients like cheese or bacon.
My Sourdough Dutch Baby Recipe
This Sourdough Discard Dutch Baby recipe is a delicious way to use up your excess sourdough starter. This can be either active or discard starter. With minimal prep and cooking time, you can enjoy a fluffy, oven-baked pancake that the whole family will love in about 30 minutes.
Unlike my other recipes such as sourdough bread or my buttery sourdough rolls, this Sourdough Discard Dutch Baby requires no long waits and proofing times.
For this recipe, you will need a large mixing bowl, a 12 inch cast iron skillet, and a hand mixer or a good dough whisk.
Ingredients
- 2 cups (400g) sourdough starter (active or discard)
- 2 cups (480g) milk
- 8 eggs
- 1/2 tsp salt
- 2 tbs (42g) honey or maple syrup
- 6 tbs (85g) butter
- Optional: 1 tsp vanilla extract
Instructions
- Add the butter to the cast iron skillet
- Place the skillet inside the oven and preheat to 450ºF
- While the oven is preheating, mix together all of the remaining ingredients in a large mixing bowl. I like to use one of these hand mixers.
- Once the oven has reached 450ºF, remove the skillet from the oven and swirl the butter around to fully coat the skillet.
- Add the mixture to the hot skillet and place back into the oven.
- Cook for 25-30 minutes. This will vary oven to oven. You want the middle to look fully cooked and the sides should be cooking up higher than the center.
- Allow it to cool off for about 5 minutes before serving.
We usually eat ours topped with maple syrup and with a side of scrambled eggs.
Variations
These additional ingredients are added directly into the batter and mixed in before pouring it into the skillet.
- Add frozen berries to the mixture
- Add 1 tsp cinnamon
- Sprinkle in some mini chocolate chips

- Add the mixture to the hot skillet and place back into the oven
- Bake for 25-30 minutes. The middle should look fully set and the sides baking up higher than the center.
- Allow it to cool off for about 5 minutes before serving.
