Description
These whipped and fluffy homemade marshmallows are a yummy and nutritious snack that can be whipped up in about 15 minutes (plus additional set time).

- 3 tablespoons (45g) unflavored gelatin
- 1/2 cup (165g) maple syrup
- 1 tablespoon vanilla extract
- 1 cup (240g) water- divided
- a pinch of sea salt
- Coconut oil for greasing the pan. (You can skip this and line with a sheet of parchment paper as well.)
Instructions
- To the stand mixing bowl, add the gelatin and 1/2 cup (120g) of water. Mix it together and let it bloom for about 5 minutes.
- While the gelatin is blooming, add to a small saucepan: the maple syrup and the remaining 1/2 cup of water.
- Simmer the maple syrup and water mixture on the stove for 5 minutes.
- Using the whipping attachment on the stand mixer, turn the speed setting to 2 to begin mixing the gelatin mixture.
- While it is mixing, slowly pour in the maple syrup and water mixture that has been simmering.
- Add the vanilla and a pinch of salt.
- Turn the speed up to 4 on the mixer and mix for 10 minutes.
- Lightly oil the inside of the baking dish with coconut oil. (Or use parchment paper instead.)
- The mixture will be light a fluffy now. Turn off the mixer and pour it into the oiled dish.
- Work quickly as the gelatin will begin to set.
- Cover the dish with its lid and refrigerate for at least 4 hours.
- Remove from the fridge and slice into pieces. This can be done while they are still in the pan or you can remove them and then slice.
