What is a French Yogurt Cake?
French yogurt cake, also known as “gâteau au yaourt,” is a simple and popular dessert in France. This recipe is so simple. It is moist, light, and tasty. It is great served alongside coffee, with fruit, or even as a birthday cake.
The key ingredient in a French yogurt cake is, as the name suggests, yogurt. This ingredient gives the cake a moist and tender texture.
I have adapted this recipe to be lower sugar than the original recipes that I came across for French Yogurt cakes. I also replaced conventional cooking oils with ghee and all purpose flour with Einkorn flour.
Why I use Einkorn flour.
Einkorn is the only wheat never hybridized and has only two sets of chromosomes. It’s grown organically and tested for glyphosate. Its weak gluten makes it easier to digest. It lacks the gluten proteins that trigger symptoms of gluten sensitivity. (Source: Jovial Foods)
If you don’t have einkorn flour, all purpose flour will work just fine.
Things you may need.
Ingredients
- 1/2 cup (110g) yogurt (regular or greek)
- 1 1/2 cup (180g) einkorn flour (or all purpose)
- 3 eggs
- 1/2 cup melted ghee (or another flavorless oil)
- 1/2 cup (120g) organic cane sugar
- 1/2 tsp salt
- 1 tsp vanilla extract
- 2 tsp baking powder
Instructions
- Preheat oven to 350°F
- Wipe a 9×5″ bread pan with butter, ghee, or use cooking spray
- In a large mixing bowl, whisk together the yogurt, eggs, and sugar until well blended.
- Stir in the flour, baking powder, salt, and vanilla.
- Stir in ghee (make sure it is warmed enough to be liquidy)
- Mix until smooth
- Pour the batter into the bread pan and bake for 40-45 min.
- Allow to cool for at least 10 min before slicing. (Though an hour or so is best in my opinion.)
Serving Suggestions
- Topped with whipped cream, powdered sugar, fresh berries, lemon zest…
- Served with coffee or tea
