This crisp and fluffy einkorn waffle recipe is perfect for a hearty breakfast or a delightful brunch treat. These waffles are highly requested for birthday breakfasts around here.
This recipe can also be made with all purpose flour if you do not have einkorn flour. I prefer to use einkorn flour when I am not using sourdough due to its health benefits. Einkorn flour is the only non-hybridized wheat and its weaker gluten structure makes it easier to digest.

Ingredients
- 3 cups (360g) einkorn flour (sub all purpose flour)
- 1 tsp (6g) salt
- 2 tbs baking powder
- 2 tbs (30g) maple syrup (or raw honey)
- 1/2 cup (113g) melted butter (or coconut oil)
- 2 cups (480g) milk
- 3 eggs
- Optional: 2 tsp vanilla extract
Instructions
- Preheat and Prepare: Preheat your waffle maker according to the manufacturer’s instructions. Lightly grease it with cooking spray or a little melted butter to prevent sticking.
- Mix Dry Ingredients: In a large mixing bowl, combine the einkorn flour, salt, and baking powder. Whisk these dry ingredients together until they are well blended.
- Combine Wet Ingredients: In a separate bowl, whisk together the milk, melted butter (or coconut oil), eggs, and vanilla extract. Ensure that the melted butter is slightly cooled so it doesn’t cook the eggs.
- Create the Batter: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined. Be careful not to overmix.


- Cook the Waffles: Pour the batter into the preheated waffle iron, using a ladle or measuring cup for consistent portion sizes. I use a 1/2 cup measuring cup for my 7 inch waffle iron. Cook according to your waffle iron’s instructions until the waffles are golden brown and crispy. This usually takes about 3-5 minutes per waffle. Keep an eye on the steam released from the waffle iron. Once it stops steaming a lot they are usually done.
